Defining Pu Er tea is a complex task, as it encompasses a wide range of characteristics and production methods. Over time, the standards for Pu Er tea have evolved, reflecting changes in taste preferences, advancements in tea production techniques, and shifts in consumer demands. Today, Pu Er tea is broadly classified into two types: raw (sheng) Pu Er and ripe (shou) Pu Er.

Types of Pu Er

Raw Pu Er, also known as sheng Pu Er, is the traditional form of Pu Er tea. It undergoes minimal processing and is aged naturally over time. Ripe Pu Er, on the other hand, undergoes a fermentation process called “wo dui,” which accelerates the aging process and creates a distinct flavor profile.
